The Local Roots of Tiashoke Farm
Tiashoke Farm is a multi-generation dairy farm that offers a diverse range of services to their community, each overseen by members of the Ziehm family. In true farm family spirit, they work together to get projects done, with the third, fourth and fifth generations side-by-side.
Throughout history, Washington County has long maintained a strong commitment to the agricultural lifestyle. Due to our proximity to many major markets within the Northeast and great climate, farms thrive here – which is why in 1966, the Ziehm family moved from Albany to Washington County, finding it the perfect place to run their dairy farm.
Over time, that farm has grown to cater to the needs of the family, each expansion also giving each family member the space to pursue their own interests and skillsets. Today, brothers Brian and Stuart Ziehm run and manage the more agricultural side of Tiashoke Farm, while Jessica Ziehm runs the more public-facing farm store.
After COVID, the family decided to invest in building a countryside destination for those wanting to experience a different way of life within the scenic hills of the Hudson Valley. And, what a different way of life that is – at last count, their farm included 1,100 milk cows, 50 beef cows, 30+ pigs, 10 acres of pumpkins and more!
What’s Inside Tiashoke Farm Store
“Featuring Meats, Sweets, Antiques and Local Farm Treats”
Originally, the farm store was built in 2022 to showcase the Cabot cheese their cows proudly provide milk for, though the plan quickly grew. In addition to their beef and cheese products, Tiashoke Farm Store also offers a variety of other farm-fresh goods including eggs, pork, and chicken.
Beyond that, there’s something to see in nearly every nook of Tiashoke Farm! Their renovated 200+ year-old barn is not only home to a range of edible goods and gifts, but also a basement full of antiques and an event space perfect for birthdays, weddings, maker’s markets and more!
Naturally, Tiashoke supports its fellow small businesses by carrying a range of local items in its farm store, including many made right here in Washington County, NY. These include products from Simply Garlic, Bentley Seed Company, Mapleland Farms, PennyCreek Candle Co., Squires Kettle Corn Co. and more.
Plus, the family members of Tiashoke Farm run a seasonal farmers market, pumpkin patch and flower stand, while also hosting events year-round from workshops to worship nights. In this way, the farm continues to become a space for visitors to gather and enjoy the beauty of the Washington County countryside, no matter the time of year.
Grass-Fed Beef and Dairy Cattle
Healthy, Happy Cows Make High-Quality Beef & Dairy
A dairy farm at its core, Tiashoke Farm didn’t raise Angus beef cows from the start. Instead, meat animals came later, a diversification that increased the farm’s resilience while leaning on the skills and infrastructure already in place. Because of the increasing demand from consumers to know exactly where their food is coming from, Tiashoke also began selling farm-raised chicken, pork and eggs. This ability to build a relationship with your producer or farmer and ask questions helps bring agriculture back into the lives of everyday people!
The Ziehms family’s long-standing commitment to quality is part of the reason they were able to partner with Cabot Creamery, one of the nation’s largest cheese producers. In fact, you can find many of those delicious Cabot products yourself in a special section of their farm store!
The Making of Meat: a Local Process
At Tiashoke Farm, beef and dairy cows are raised side-by-side on lush pastures, freely grazing on a diet of fresh grass, hay, locally-grown feed and agricultural byproducts that make tasty snacks for the cows. This locally-sourced diet results in both meat and milk that is rich in both flavor and nutrients. Tiashoke’s cows don’t eat only grass, though – to supplement their diet in the winter, the cows eat a mix of nutrient-dense home-grown forages.
By breeding the less productive dairy cows with an Angus bull, Tiashoke Farm built up their own herd of meat cows. These cows are raised until they’re about 16 months old, when they travel 6 miles up the road to Eagle Bridge Custom Meats.
There, the cows are processed and the meat packaged and labeled. Then, the beef returns to Tiashoke, where it’s sold out of their self-serve freezer in a variety of quantities and cuts, from a single rib-eye to a quarter of a cow. Of course, some of that beef is sold wholesale to local restaurants and other farm stores, too!
Milking a Dairy Cow: Tiashoke Style
The dairy cows are Tiashoke are raised in free-stall barns, allowing them to go wherever they please. With 24-hour access to food, stall cleaning three times a day and plenty of friends to hang out with, these cows live the good life!
Three times per day, Tiashoke milks their dairy cows on a special milking machine. After that, it’s loaded directly onto their milk trailer, which takes it straight to the milk plant. Then, it’s distributed to the department it’s needed most and put into delicious dairy products!
