Back to the Roots: The Cheese House
In 2007, Marge and Dave Randles built the Cheese House on Dave’s family farmstead in Argyle. The farmstead, which has been in operation since 1860, allowed the two the ability to craft high quality cheeses, smoothies, buttermilk and other dairy products.
Many years were spent in the “Cheese House” and countless products were distributed directly from Argyle to local communities, area farmers markets, and even to several New York City retail establishments and restaurants!
Over time, Argyle Cheese Farmer began to grow, with their thoughts turning toward expansion.
The Ideal Partnership
In 2020, Argyle Cheese Farmer entered into its partnership with Ideal Dairy Farms, a 6th generation dairy farm. Together, the two businesses purchased the former Lewis Super Grocery Store and renovated the building into a new processing facility. Of course, the team was excited to expand the commercial kitchen already included in the building. This allowed them to expand their product lines, creating an even larger variety of delicious dairy products!
Today, this factory allows Argyle Cheese Farmer and Ideal Dairy Farms to continue sharing their love of quality food and delicious flavor with dairy lovers throughout New York State and beyond.
What’s Inside Argyle Cheese Farmer
Argyle Cheese Farmer is home to an incredible amount of equipment, storage, and dairy, ready to make quality products for consumers. Their fully-stocked commercial kitchen equips their team with the ability to make special packaged goods, such as their frozen pizza made from scratch. By putting extra whey in the crust, consumers are able to enjoy a delicious, protein-packed meal, while Argyle Cheese Farmer reduced waste produced by their process.
To reduce the by-products of their cheese-making, Argyle Cheese Farmer uses whey to enhance the flavor and consistency of their recipes. Later, the leftover whey is transported to the farm, where it will be mixed into the cows’ feed as a tasty treat!
The Development of Dairy
With Ideal’s passion for sustainability and Argyle’s dedication to excellence, it’s no surprise that the development of dairy is done with extreme precision. After the milk is gathered from the cows, it is transported directly to Argyle Cheese Farmer’s storage containers. From there it may have any number of uses, depending on the day of the week. Some days the milk might be churned in a large structure ready to make cheese curds. Other days it could be mixed to create a healthy yogurt snack!
After the dairy product itself is made, it’s sent to their high-grade packaging machines. After packaging, the products are either put in their storefront or transported to another retail location – and the rest is history!
A2 Excellence
Naturally, Argyle Cheese Farmer’s value of excellence in their products begins right at the source: the cows of Ideal Dairy Farms. As you may know, milk is typically made up of A1 and A2 proteins – but both are digested differently. A2 milk is easiest to digest, and provides exceptional quality in both taste and for your health! In fact, the A2 protein makes a difference in your digestive health, with many scientifically-proven benefits for children and athletes alike.
To ensure the purity of their milk, the cheese operation DNA tested their cows. This helped them isolate 250 of them that produce just the A2 proteins, who became the source of Argyle Cheese Farmer’s flavorful “Just A2” product line. These dairy products deliver that classic dairy flavor – without the upset stomach!
